Ass Kickin Ratatouille

Well fall is finally upon us and I just hate this time of year.  I know I know, I should love this time of year because of the change in seasons, Thanksgiving and Christmas holidays and all of the forced quality time we get to spend with our friends and family.  However, this time of year marks uncomfortable cold weather and daylight savings time which are huge negatives in my book.  Plus, I have to deal with the stress of insane holiday shoppers, awful traffic and my company’s boring Christmas party.  The one thing I do appreciate about this time of year is that I am more creative when making my meals.  I eat about a 75%-80% raw vegan diet on a daily basis but during colder weather my belly starts to crave warmer foods.  This forces me to be more creative with my meal planning to ensure I am still getting the proper amounts of macro and micro nutrients. 

The first recipe I want to share with you is my Ass Kickin Ratatouille which is sure to make you warm from the inside out.  This savory and hearty dish is extremely easy to make and it’s gluten free!  Please add the hot sauce and spices cautiously, especially if you are sensitive to spicy foods.  They can easily be omitted from the recipe while still have a tasty hearty dish.   

What You Need

2 large zucchinis, chopped
3 large yellow squashes, chopped
2 red bell peppers, chopped
2 orange bell peppers, chopped
2 yellow bell peppers, chopped
2 large eggplant, peeled and chopped
1 medium red onion, chopped
1.5 cup cherry tomatoes, chopped
1/2 cup tomato juice
1/2 teaspoon sea salt
1 teaspoon freshly ground white pepper
1/3 cup fresh basil, chopped
2 tablespoons cumin
1 tablespoons curry powder
½ cup Canary Shatta Hot Pepper Sauce
½ cup Sriracha Hot Chili Sauce
2 shallots, minced
2 cloves garlic, minced

 
How to Make It

Spray a large skillet with nonstick cooking spray, then sauté shallots, garlic and red onion.  Add the tomato juice and cook over medium heat for about 5 minutes. Add the remaining ingredients, and cook over medium heat for an additional 15 minutes covered, or until veggies are soft and tender.

WTF, Subway now offering an all-vegan patty!

The fast-food sandwich chain, Subway, is now offering their fabulously hip, health conscious customers an all-vegan patty for their sandwiches.  This is a huge milestone for the mundane sandwich chain that rose to fame with their dumb fat Jared campaigns.  Anyway, their “Totally Vegged” Vegetable Patty was finally created after the company received innumerable requests from their veggie customers.  Unfortunately, the vegan patty is only being offered at three locations in Ontario and one in British Colombia, but Subway may expand to other franchisees if the vegan patty is successful.  Hooray to Subway for finally expanding their product to omnivores who want to stay healthy and fit but also want to live a life free of animal cruelty!  I still don’t like the fast food chain because of their average, poor quality sandwiches.  However, I do like that they are making changes to accommodate their vegetarian and vegan customers.

Fake Meat Butcher Shops?

In October, 2011 a unique butcher shop opened in the Netherlands called Vegetarian Butcher. This exceptional shop, which has 30 locations, offers their customers a plethora of meat-free products, such as chicken, sausages, gyros, bacon and a surplus of other tasty treats. 

Niko Koffeman, one of the shop’s founders, designed this concept to help the 75% of Dutch people who don’t eat meat on a daily basis.  The goal was to help them limit their meat consumption by offering alternative products that look and taste just like actual meat.  The Dutch believe that meat production is highly inefficient creating a growing concern for sustainability so they have greatly reduce their meat consumption.

Is this the answer for people looking to eliminate meat from their diets?  I do like my occasional fake meats and think it can be a terrific resource for those transitioning into a meat free diet.  However, I do not think fake meats should be over consumed.  Fake meats are heavily processed and usually contain gluten, making it difficult for the body to digest.  People worldwide need to limit their intake on processed foods and should lean more towards natural whole foods that are full of vitamins and minerals.  This is the only way that people can guarantee they are getting all the nourishment they need from their foods.

New Vegan Cooking Show Airs Tomorrow!

An all new vegetarian cooking show will be premiering tomorrow, October 1st, 2011, on local public broadcast stations around the country. The Jazzy Vegetarian, hosted by Laura Theodore, a New Jersey cook and soon-to-be cookbook author, aims to show both vegetarian/vegans and omnivorous food connoisseurs alike how easy, enjoyable and sophisticated vegan cuisine can be.

Thirteen episodes of the program have already been filmed, and the show has been picked up by more than 130 stations—about 70 percent of the public-television market. Theodore’s book—a companion to the show—is also scheduled to be released in October.

Congress Says No to GM Salmon

Members of Congress are working to prevent the FDA from approving genetically engineered salmon for human consumption. Massachusetts-based company AquaBounty designed its salmon to grow twice as quickly as wild salmon. Congress members from Alaska are leading the opposition, saying that the engineered fish will damage the state’s wild salmon industry, but more than a dozen senators have written to the FDA about their concerns with the related food-safety and environmental risks. Approval of the modified salmon would open the door for other genetically modified organisms, such as the “Enviropig” being developed in Canada, which promises to have less-polluting manure, or cattle resistant to mad cow disease.

7-Eleven Introduces 4 Vegan Meals

7-Elevens in the Northeast will now be offering 4 vegan meals at about a hundred locations. The meals are:

  • Vegan Linguine Tikka Massala
  • Vegan Pad Thai Noodles
  • Vegan Asian Linguine
  • Vegan Spinach Noodles with Vegetable

Late last year, 7-Eleven launched a pilot program at eight New York City stores that featured four other ready-to-eat vegan meals.  After great success they expanded their program.  Participating locations have been posted at HSUS’ farm animal protection campaign page on Facebook.

Vegetarians Love Oral Sex

I don’t know how accurate this study is but find it hilarious!

OkCupid.com recently did a study to determine who likes oral sex more and ironically, vegetarians love oral sex WAY MORE than non-vegetarians.
